The square shaped Ewes milk cheese from Lyon, France, has a unique, orange-tinted bloomy rind, compliments of the annatto, an orange-red colouring derived from the seeds of the achiote tree, native to tropical regions from Mexico to Brazil. A decadent soft cheese that oozes right out of the rind once you cut into it, buttery and simply delicious, with savoury notes of hay, mushrooms, and grass. The velvety texture envelopes the tongue and lingers, smooth and creamy.
