Cropwell Bishop Stilton

A rich tangy flavour, and a velvety-soft texture

Since 1996, Stilton has borne European Protected Designation of Origin (PDO) status. On 31st December 2020, when Britain left the EU, Stilton joined the UK GI scheme and now bears the UK protected designation of origin (PDO) logo.
Stilton's PDO status means that it can only be made in Derbyshire, Nottinghamshire and Leicestershire, and producers must follow traditional recipes that have been around for generations.
That's exactly what we do at Cropwell Bishop Creamery. More importantly though, we make Stilton that is worthy of its international reputation as one of the tastiest cheeses available. And we do so with all the care and attention that befits our status as one of the last remaining artisan Stilton-makers in the country. A rich tangy flavour, and a velvety-soft texture which makes it melt in the mouth, smooth and mellow, with a natural coat and blue veining. To allow this Stilton to develop its unique flavour, the Creamery normally age it to 12 weeks.

We suggest

Keep it simple with this one and have a lovely range of All Butter Crackers to compliment the Stilton, our favourite is the Natural Wholemeal Cracker, equally the Spelt and the Wheat both work well.
Just slither a little Stilton onto the cracker and finish with a ¼ tsp of Cherry Fruit for Cheese.
