Blue tones with a delicate lingering flavour
This superb blue cheese, golden in colour, with a creamy, gently salty taste that grows stronger with maturity. Perl Las means “Blue Pearl” which is fitting for a cheese of such quality. This blue veined cheese differs from most bold British blues. First a rich creaminess followed by a short saltiness then the blue tones with a delicate lingering flavour. With the rind rubbed in local sea salt, your palette with experience a subtler saltiness, unlike blue cheeses in general. As the Perl Las matures the texture becomes fudge like, allowing the cheese to melt on the tongue. This allows a subtle increase in the spicy lingering blue overtones.
The cheese is still made entirely by hand and some of the cast iron presses are over a hundred years old.

Serving suggestion
Squish it onto a chunk of warm crusty bread, topped with a little Tracklements Sticky Fig Relish to compliment the creaminess of the cheese. Simple, what’s not to LOVE.
