Mushroomy notes and a chicory finish with age
Starting in 1981 the 18th century coachyard of Sharpham House was home to the creamery where handmade cheeses were produced. Using the rich Jersey milk from their own cattle and vegetarian rennet, the unpasteurised cheeses have been so well received that demand now far exceeds supply. Hence in April 2003 production was moved to a new purpose-built creamery sited next to the winery.
The building is modern and bigger; however, the team still employ the same traditional techniques and the cheeses remain fully hand produced.
Buttercup yellow from the Jersey milk, it is a mould ripened cheese, firm, rich and creamy when young, softening with mushroomy notes and a chicory finish with age.
We like to age it slightly at Sheppy’s, so that its perfect for our customers.
Understandably an accolade of Awards has been won for this cheese, the list is so long we have named just a few.
