Vacherin Mont d'Or
Cows milk, unpasteurized
The famous spruce-bound cheese from France. Vacherin Mont D'Or is a highly seasonal delicacy and is sought after by cheese connoisseurs the world over as it is only available from October until the end of March.
The raw cow's milk cheese comes packed in a wooden box, where it's also wrapped in a strip of spruce bark which gives the cheese its incredible woody/spruce-y flavour. The texture is silky and wonderfully rich on the palate, but the cheese really shines when it is baked in the oven.

Ingredients
3 Shallots, finely chopped
2 Sprigs of rosemary, finely chopped
2 Garlic cloves, crushed
20g Butter
30ml Craft Perry dry cider (the rest of the bottle is to drink while cooking)
1 Whole Vacherin Mont d'Or, 450g
Method
• Pre warm your oven to 180°C
• Remove the wooden box with a serrated knife to just below the top of the rind
• Soften the shallots and crushed garlic in butter in a shallow pan. Add the with rosemary and Perry. Cook off until the cider is evaporated. Let the mixture cool.
• Cut off the top rind of your Vacherin with a long-blade knife. Add the cooked shallot mixture add cuts downward so that the mixture infuses with the cheese.
• Replace top and the lid.
• Place in your oven and bake for 10 mins.
• Remove the foil and lid, then grill the top rind until it is golden and crunchy.
