As the nights draw in and the air fills with the scent of woodsmoke, our cheesemonger’s choice for November is the Smoked Westcombe Cheddar. A beautifully balanced cheese that captures the spirit of Bonfire Night.
This Somerset classic begins life as Westcombe’s traditional farmhouse cheddar, hand-crafted by the Calver family using raw milk from their own herd of cows. The cheese is clothbound and aged in the farm’s cool, humid cellars, developing deep, nutty flavours with a gentle tang. It’s then naturally cold-smoked over oak chips, giving it a rich, toasty aroma and smooth smokiness that lingers without overpowering the cheddar’s character.
The result is a cheese that’s both comforting and complex — think campfire warmth, roasted nuts, and a whisper of caramel sweetness.
Perfect Cider Pairing: Sheppy’s Winter Spiced Cider.
To complement the Smoked Westcombe, we recommend Sheppy’s Winter Spiced Cider. This gently mulled cider brings notes of cinnamon, clove, and nutmeg — the perfect seasonal partner to the cheese’s smoky depth. At Sheppy's it is important for us to know about our cheesemakers, who they are, their history, their story and their processes so there is a direct connection from them to you.
At our core is a selection of some of the most inspiring and exciting raw milk and pasteurised cheeses currently being made. We supply cheese made from cow, goat and sheep milk, traditional animal rennet and many vegetarian varieties. We have a range of blues, washed rinds, fresh yoghurty cheeses, young curds, soft unctuous cheeses and traditional hearty regional cheeses.

Cider comes from the land, the flavour comes from the earth and the orchard where the fruit is grown. Cheese is no different, its complexity is created by the milk, the animals and the pastures themselves. Both products rely on the terrain, soil and climate of a region for their products to flourish.
We work with cheesemakers that value the quality of what they produce and whose practices sustain our environment and cultural heritage. They produce food with a story - a provenance and place.
